Easy Camping Breakfast Recipe- Huevos Rancheros

One of our favorite parts about going camping is waking up, making some coffee and deciding what to cook for breakfast. There is something so satisfying about cooking and eating a meal out in nature. One of our favorite easy RV camping breakfast recipes is Huevos Rancheros.  We love this recipe because it is effortless to make, has minimal ingredients all while being incredibly tasty.

To start things off, make the Pico de Gallo.  This step can also be made ahead of time before you head out on your RV trip.  First, chop up the tomatoes, onions, and cilantro.   Mix in a bowl, squeeze the lime over the mixture, season with salt and pepper and set aside. 


Next step is to heat the salsa verde in a pan either over a grill, a portable camping stove or on your RV stovetop.  We enjoy cooking outside, but on rainy or cold days, the RV stove stop is a great amenity to have!  Bring the salsa to a simmer then remove from heat.

Next, heat some cooking oil in your pan. We like to use a cast iron skillet, but any cooking pan works.  Once the oil is hot, toss in one or two tortillas.  Wait 1-2 minutes then flip to cook the other side.  Cook for your tasting (the crispier, the better, for us!).  Remove from skillet and on to the last step.

If your pan is lacking some oil, feel free to add some more.  Let the oil heat up, then crack your egg into the pan.  From the temperature of the skillet and the oil, the egg will cook upwards, so no need to flip the egg.  Once you see the edge of your egg start to brown, it is ready.

The Assembly

Place your egg on the tortilla, spread over the warm salsa, pico de gallo, and any other toppings you may desire. We added avocado and a squeeze of lime. You can also add some shredded cheese if you wish!

Now it's time to enjoy!  Best paired with a warm cup of coffee!
